Broccoli microgreens are one of the most well know microgreens for their health benefits. Broccoli microgreens have antioxidants, anti-inflammatory and anti-microbial properties. But really the reason broccoli microgreens are so favorited is because of its sulforaphane density.
Sulforaphane is an important plant-derived compound that has been studied for decades for its cancer-fighting properties!
All cruciferous vegetables contain sulforaphane but (before the study of microgreens emerged) it was known that mature broccoli had the highest density of sulforaphane per volume. Now we know that broccoli microgreens, in fact, have the absolute highest density of sulforaphane per volume at 10-100 times the amount that mature broccoli has!!
